Hummus

Ingredients

112 grams (4 ounces) dried chickpeas

4 large garlic cloves chopped

4 tablespoons sesame seeds

Juice of 3 lemons freshly squeezed

1 teaspoon paprika

Description

(GF, DF, NF, YF, V)

Spread on sandwiches, biscuits or toast instead of butter or margarine.
Note: If preferred, hummus can be bought ready-made at health food stores or supermarkets.

Directions

Soak the chickpeas overnight and discard skins. Drain.

Using fresh water, boil the soaked chickpeas for 1 hour and drain.

Place the chickpeas in a blender and blend with the garlic until smooth. Set aside.

Place the sesame seeds in a grinder and grind until smooth.

Add to chickpeas and garlic.

Stir in the lemon juice and mix well.

Sprinkle with paprika.
